It is a perfect meal for lunch or dinner and can be served with a raita or any curry of your choice. In this blog, we will share a detailed and exciting recipe for making foxtail millet pulao from Truly Desi, a brand that specializes in providing organic and healthy millets.

Before we dive into the recipe, let’s talk about foxtail millet. Foxtail millets, also known as Thinai in Tamil, Kangni in Hindi, and Korra in Telugu, are small, yellow grains that are a rich source of fibre, protein, and essential nutrients. They are gluten-free, easy to digest, and have a low glycemic index, which makes them an ideal food for people with diabetes and those who are trying to lose weight.

Now, let’s get started with the recipe.

– 1 cup foxtail millet

– 1 onion, finely chopped

– 2 tomatoes, finely chopped

– 1 green chilli, finely chopped

– 1 tsp ginger-garlic paste

– 1 tsp cumin seeds

– 1 tsp coriander powder

– 1/2 tsp turmeric powder

– 1/2 tsp red chilli powder

– 1/2 tsp garam masala powder

– Salt to taste

– 2 tbsp oil or ghee

– 2 cups water

– Coriander leaves for garnish

1. Rinse the foxtail millets in water and soak them for 30 minutes.

2. Heat oil or ghee in a pan and add cumin seeds. Let them splutter.

3. Add chopped onion, green chilli, and ginger-garlic paste. Saute until the onion turns golden brown.

4. Add chopped tomatoes and saute until they become soft and mushy.

5. Add coriander powder, turmeric powder, red chilli powder, garam masala powder, and salt. Mix well.

6. Drain the water from the soaked foxtail millets and add them to the pan. Stir well to coat the millet with the masala mixture.

7. Add 2 cups of water and mix well. Cover the pan with a lid and let the millets cook on medium heat for 15-20 minutes or until all the water is absorbed and the millets are cooked.

8. Turn off the heat and let the pulao rest for 5 minutes.

9. Garnish with coriander leaves and serve hot with raita or any curry of your choice.

– You can add vegetables of your choice such as carrots, peas, beans, and capsicum to make the pulao more nutritious and flavorful.

– You can also add coconut milk instead of water for a rich and creamy texture.

– To enhance the flavour, you can roast the foxtail millets in a pan for a few minutes before soaking them.
