Method:

1. Rinse the foxtail millets in water and soak them for 30 minutes.
2. Heat oil or ghee in a pan and add cumin seeds. Let them splutter.
3. Add chopped onion, green chilli, and ginger-garlic paste. Saute until the onion turns golden brown.
4. Add chopped tomatoes and saute until they become soft and mushy.
5. Add coriander powder, turmeric powder, red chilli powder, garam masala powder, and salt. Mix well.
6. Drain the water from the soaked foxtail millets and add them to the pan. Stir well to coat the millet with the masala mixture.
7. Add 2 cups of water and mix well. Cover the pan with a lid and let the millets cook on medium heat for 15-20 minutes or until all the water is absorbed and the millets are cooked.
8. Turn off the heat and let the pulao rest for 5 minutes.
9. Garnish with coriander leaves and serve hot with raita or any curry of your choice.
Tips:
– You can add vegetables of your choice such as carrots, peas, beans, and capsicum to make the pulao more nutritious and flavorful.
